- 250 g Flour
- 20 g Baker's yeast
- 2 tbsp. tbsp Oil
- 2 pinches Salt
For garnish :
- 200g Ham
- 150 g Mozzarella (or Gouda cheese)
- 1 kg Tomatoes
- 1 can of tomato puree
- 100 g button mushrooms
- 10 black olives
- 2 Onions
- 2 garlic cloves
- thyme and oregano powder
- Salt
- Pepper
- Start by preparing a leaven: dissolve the yeast in half a glass of warm water then incorporate this mixture into 100 g of flour.
- Leave to rise in a warm place for 20 minutes: the dough should double in volume. While kneading vigorously, add the rest of the flour to the sourdough, with a tbsp. tablespoons of oil, salt and a little water to soften the dough. Let rise again for 30 minutes.
- Meanwhile, scald the tomatoes, peel and seed them. Cut them into thick slices. Clean and slice the mushrooms. Peel and cut the onions into thin rings. Pit the black olives.
- Preheat the oven to th. 8 (240°C).
- Roll out the dough to the size of the baking sheet. Place it on the oiled baking sheet.
- Coat the dough with a layer of tomato purée then arrange the slices of tomatoes and onions, the mushrooms and the olives, as well as the ham and the cheese in very thin slices. Salt, pepper and flavor with peeled and minced garlic, thyme and oregano.
- Drizzle with a few drops of oil and cook in the oven for 20 to 25 minutes.
- Serve very hot.
