
Shepherd’s pie ‘Roast lamb’ with mashed cauliflower

- 1 1/2 tablespoon extra virgin olive oil
- 600 g diced lamb
- 2 leeks, trimmed, halved, sliced
- 1 1/2 tbsp chopped fresh rosemary
- 1/4 cup plain flour
- 3 cups Massel beef broth
- 2 tablespoons Worcestershire sauce
- 400 g kent pumpkin, peeled, cut into 2cm pieces
- 200 g green beans, trimmed, cut into 3cm pieces
- 2 tablespoons mint jelly
- 1 head cauliflower, cut into florets
- 3 garlic cloves, minced
- 1/2 cup buttermilk
- 20 g softened butter
- Big pinch of ground nutmeg
- Sprigs of fresh mint, to serve
- Heat 1 tablespoon of oil in a large, heavy-bottomed saucepan over medium-high heat. Cook lamb, in batches, for 5 minutes or until browned. Transfer to a heatproof bowl.
- Add the leek and rosemary to the skillet. Cook, stirring, for 5 minutes or until softened. Add the flour. Cook, stirring, for 1 minute. Gradually add broth, stirring until smooth. Bring to a boil. Return the lamb to the pan with the Worcestershire sauce and any remaining juices. Reduce heat to low. Simmer, covered, for 1 hour. Stir in pumpkin and 1/2 cup water. Bake, covered, for 20 minutes or until pumpkin is just tender. Add the beans. Cook for 5 minutes or until the beans are just tender. Add the mint jelly.
- Meanwhile, cook cauliflower and garlic in medium pot of salted boiling water for 15 minutes or until tender. Drain. Cool 10 minutes. Place the cauliflower and garlic in a food processor along with the buttermilk, butter and nutmeg. Season with salt and pepper. Process until smooth.Preheat the oven to 200C/180C convection heat. Transfer the lamb mixture to a 5cm deep pie dish (6 cup capacity). Garnish with mashed cauliflower. Drizzle with remaining oil. Bake for 20 minutes or until the mash is golden brown. Rest for 10 minutes. Serve sprinkled with sprigs of mint.
