
Yule log with sweet potato and chocolate

Instructions
- 90 cl milk (preferably whole)
- 100 g butter
- 250 g dark chocolate
- 500 g sweet potatoes
- Wash and peel the sweet potatoes thoroughly. Cut them into medium sized cubes.
- In a saucepan, cook the sweet potato cubes over low heat with 75 cl of milk for 15 minutes, stirring regularly so that the mixture does not stick.
- Break the dark chocolate into coarse pieces and cut the butter into pieces in a bowl.
- Melt them in a saucepan over a bain-marie with the remaining 15 cl of milk.
- When the sweet potatoes are cooked, transfer them with their cooking milk to a bowl and gently mash them with a fork until you obtain a smooth and thick puree.
- Incorporate the mixture of melted chocolate, milk and butter into the mashed sweet potatoes.
- Mix well to have a smooth and homogeneous sweet potato and chocolate puree.
- Line your cake tin with aluminum foil, leaving an excess length on the edges of the tin.
- For the mashed sweet potatoes and chocolate into the mold to give it its Yule log shape. Cover with the aluminum foil that protrudes from the cake pan.
- Refrigerate for at least 4 hours before serving your sweet potato and chocolate Yule log.
