- Ham Cheese Wrap
- 1 banana and cinnamon muffin
- 1 small bunch of grapes
- 95 g Coles Strawberry & Raspberry Yogurt
- 25 0ml Coles tropical juice
- Ham and cheese wrap:
- 1 whole grain and Coles cereal soft wrap
- 1 tablespoon mayonnaise
- 10 g baby spinach
- 75 g sliced country ham with honey
- 1/4 cup (30 g) grated savory cheddar cheese
Banana Cinnamon Muffins:
- 1 cup (150g) self-rising flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup (55g) brown sugar
- 1/2 cup mashed ripe banana
- 1 Australian Coles Hen Egg
- 2 tablespoons olive oil
- 2 tablespoons buttermilk
- 18 banana slices, extra
- To make the banana & cinnamon muffins, preheat the oven to 180°C. Line 6 holes of a 1/3 cup (80 mL) muffin pan with paper liners. Combine flour, cinnamon, sugar, mashed banana, egg, oil and buttermilk in medium bowl. Stir until just combined.
- Divide the mixture evenly into the paper cases. Garnish with banana slices. Bake for 20 minutes or until a knife inserted in the center comes out clean. Invert onto a wire rack to cool completely. Store in an airtight container for up to 2 days. (You can also wrap each cooled muffin in plastic wrap and freeze for up to 3 months.)
- Meanwhile, to make the ham and cheese wrap, place the wrap on a clean work surface. Spread evenly with mayonnaise. Top with spinach, ham and cheddar. Roll the wrap to enclose the filling.
- Place the wrap, muffin, raisins, yogurt, and juice in an insulated bag (or place it in a lunch box with an ice pack).
