
Clafoutis with two salmon and leeks

- 125 g Fresh salmon steak
- 100 g smoked salmon
- 3 Leeks
- 1 onion
- 1 tbsp. fish fumet
- 1 tbsp. coffee Anise
- 3 eggs
- 70 g Flour
- 30 cl Milk
- 20 cl Fluid cream
- 0.5 tbsp. coffee Cumin powder
- 2 tbsp. tbsp Sunflower oil
- Salt pepper
- Peel the leeks, remove the end of the green part and the withered leaves, rinse the leeks and cut them into rings.
- Peel and mince the onion.
- Brown the leeks and onion in hot oil, salt and pepper. Add the fish stock and 10 cl of water.
- Cover and cook over low heat for 10 minutes.
- Preheat the oven to 180°C (th.6). Rinse, dry the salmon steak and check the absence of bones, then cut it into cubes.
- Slice the smoked salmon into strips. Mix them with the vegetables and add the anise. Transfer everything to a baking dish.
- Whisk the eggs with the flour, milk, cream, add the cumin, salt and pepper.
- For over the salmon and bake for 35 minutes. Serve hot, warm or cold.
Tip: Replace the fish stock with a less expensive chicken stock cube.
