
Italian tuna

- 4 slices white tuna (200 g each)
- 5 Tomatoes
- 1 tbsp. tablespoons tomato puree
- 2 Onions
- 2 garlic cloves
- 100 g Black olives
- 20 cl white wine
- 3 tbsp. teaspoon Dried oregano
- 1 sprig of thyme
- 4 tbsp. tablespoons olive oil
- 60 g grated parmesan
- 2 pinches cayenne
- 2 pinches Sugar
- Salt
- Pepper
- Brush the slices of tuna with olive oil on both sides. Salt and pepper them. Sprinkle them with oregano.
- Layer the tuna slices on a deep plate.
- Then cover everything with aluminum foil and let it rest for 1 hour in the bottom of the refrigerator.
- Meanwhile, boil the tomatoes and peel them. Cut them in half and squeeze them to remove the seeds.
- Coarsely chop the flesh of the tomatoes.
- Heat the rest of the olive oil in a pan and add the peeled and finely chopped onions to it.
- For in the tomatoes, mix and moisten with the white wine added to the tomato puree.
- Add the peeled and pressed garlic, the sugar and the stripped thyme. Season with salt, pepper and pinches of cayenne.
- Let simmer and reduce for 30 minutes. Finally add the olives and keep warm.
- Grill the slices of tuna on a preheated cast iron grill. Count about 3 minutes on each side.
- Arrange the tuna on warm plates and cover it with the sauce. Sprinkle with parmesan. Serve with boiled potatoes or pasta.
