
Shrimp Stuffed Chicken

- 1 chicken of 1.5 kg
- 100 g brown rice
- 50 g Shelled prawns
- 1 spring onion
- 1 shallot
- 1 garlic clove
- 3 sprigs of parsley
- 2 eggs
- 1 tbsp. tablespoons raspberry vinegar (or cider)
- 1 tbsp. Honey
- 30 g Butter
- 10 cl dry white wine
- 2 tbsp. tablespoons Oil
- Salt
- Pepper
- Plunge the rice into a pan of salted boiling water and let it cook for 30 minutes.
- Flamed the chicken, remove the last small feathers. Rinse it. Then pat it dry with paper towel.
- Peel the onion and cut it into rings. Peel the shallot and the garlic clove. Chop them.
- Fry them in butter. When the onion becomes translucent, add the prawns.
- Let simmer for 1 more minute. Salt, pepper and add the chopped parsley.
- Add this mixture to the drained and cooled rice with 2 beaten eggs, honey and vinegar.
- Mix well to obtain a homogeneous filling. Adjust the seasoning with salt and pepper if necessary.
- Fill the inside of the chicken with this preparation. Tamp it down.
- Shield the stuffing with a double piece of aluminum foil folded in half and close the opening with 2 or 3 wooden skewers.
- Heat the oil in an oval casserole. Lightly salt the chicken and brown it on all sides.
- Eliminate the cooking oil. For the white wine and 10 cl of water into the casserole.
- Half cover and cook for 50 minutes.
- Baste frequently during cooking.
- Serve hot or cold, with a mixed salad.
